Wolf Dual-Stacked Sealed Burner
Wolf's dual-stacked sealed burner is a patented two-tier design. From High down to Low the flame burns on the upper tier; turn past the detent at the lowest setting, pushing the knob in, and the flame moves to a second tier on the cap, where the simmer can be adjusted with the same control.

A cap not sitting flat. The high flame can look normal, but the simmer tier is the first thing a tilted cap spoils, and the small flame wavers or goes out.

Simmer ports part-blocked after a boil-over, so the low flame is patchy or will not stay lit even though the upper tier burns cleanly.

A powerful hood overhead pulling at the flame. Wolf notes that a strong blower can draw a flame off the burner, and running it a speed lower often lets the simmer settle.

The valve itself, when the burner is clean, the cap seated and the air still, yet the simmer range will not hold steady.
Finding the simmer
Turning the knob down only takes the flame as far as Low on the upper tier. Simmer is a separate step: turn to the detent at the lowest setting, push the knob in and keep turning. The flame moves down to the second tier, and from there it can be set anywhere across the simmer range. A burner that seems unable to simmer is sometimes just a knob that has not been pushed past that point.
What it means for the repair
We start where the patterns point: cap, ports, then draught. Cleaned, dried and seated flat, most dual-stacked burners simmer again without a part. Why won't my Wolf burner go down to a simmer?
On a dual-stacked burner, simmer is not just the bottom of the dial. Turn the knob to the detent at the lowest setting, push it in and keep turning; the flame should move to the second tier. If it will not, or the small flame keeps going out, Wolf Repair Kirkland, (425) 699-2400, checks the cap, ports and valve.
My simmer flame goes out when the hood is on. Is the burner faulty?
Not necessarily. Wolf notes that a powerful ventilation blower can pull a flame off the burner, and the simmer flame is the smallest the range makes. Try the hood a speed lower. If the flame then holds, the burner is fine; if it still drops out with the hood switched off, it needs a proper look.
